Hey friends! If you have ever sat in a drive-thru line just for the cheese, this one is for you. This copycat nacho cheese is Velveeta and evaporated milk melted down with a little jalapeno brine and cayenne, and it takes about five minutes flat. No fancy techniques, no fifteen ingredients, just a saucepan and a spoon.

What to put next to it

Tortilla chips are the obvious move and a great one, but this cheese is just as happy on fries, spooned over a baked potato, or drizzled on scrambled eggs the next morning. Since the dip itself is all rich cheese and salt, I like to set out something crunchy and fresh alongside it, sliced peppers, pico, even just extra pickled jalapenos, so your plate has a little contrast and not just cheese on cheese.

The one tip that matters

Taste before you serve, then taste again. This recipe is built to be adjusted at the end, add more cayenne if you want more kick, more brine if you want more tang. Do not commit to the seasoning until that last minute, because a spoonful of extra jalapeno brine right before serving wakes the whole pot up.

Ways to change it up

When I want this heartier, I stir in cooked taco meat or drained black beans right at the end so it turns into more of a queso dip meal. For a smokier version, swap in chipotles in adobo for the jalapeno brine and cut the cayenne back a bit. Either way it is still just one pot and five minutes of stirring.
