Steak, scrambled eggs, and melted cheese, folded up in a tortilla and seared until the outside goes crackly and golden. It's a weekend breakfast that eats like a treat but comes together in one pan and about 35 minutes.

Short on time in the morning? Cook the steak and scramble the eggs the night before, then just fold and sear when you wake up. You can even fully assemble the wraps ahead and keep them in the fridge, then toast straight from cold, just give them an extra minute per side in the pan.

Can I make these ahead for the week?
Yes, assemble and refrigerate the folded wraps for up to two days, then toast straight from cold, adding an extra minute or two per side. I wouldn't freeze them though, the eggs get watery when they thaw.
What if my tortilla keeps tearing when I fold it?
You're probably using a tortilla that's too small or too cold. Warm it for a few seconds in a dry pan first to make it pliable, and stick with the 10 to 12 inch size.
Do I need oil in the pan for the sear?
No, skip it. The tortilla has enough starch to crisp up and release on its own, and oil actually makes the crust greasy instead of crackly.
Can I use a different cut of steak?
Any tender steak with good marbling works, ribeye or sirloin included. Just make sure to slice it thin against the grain so it folds neatly into the wrap.
