The Strawberry Shortcake Frappuccino You Don't Need a Drive-Thru For

A five-minute blender trick that tastes like the Starbucks favorite, made with stuff already in your fridge.

Simple ingredients, delicious meals. That's the whole game.

Hey! So this one started because I was craving a strawberry shortcake frappuccino on a random Tuesday and did not feel like putting on real pants to go get one. Turns out you can build the whole thing in your own kitchen in about five minutes, blender and all. No barista, no app, no line. Just milk, strawberry, a little cinnamon sweetness, and a whole lot of frothy pink happiness.

Where this drink actually comes from

This is my homemade riff on the strawberry shortcake frappuccino, which itself is Starbucks riffing on the classic dessert. I love that chain, but a medium of these things runs you real money and a whole lot of drive-thru waiting. Once I realized the flavor is really just strawberry, milk, and cinnamon dolce syrup working together, I couldn't unsee how easy it'd be to make at home. Now it's my go-to when I want something that feels like a treat but takes less effort than making actual coffee.

How it comes together

Everything except the toppings goes straight into the blender: milk, strawberry puree, cinnamon dolce syrup, a pinch of xanthan gum, and ice. Add the milk and puree before the ice, not after. It keeps the blades from struggling and gives you that thick, frosty texture instead of something thin and separated. Blend until it's smooth and just starting to look frothy on top, that's your cue it's ready.

The one thing that'll wreck this drink is over-blending. Leave it running too long and the ice melts faster than it should, and suddenly your thick frappuccino is a watery pink milkshake. Blend in short bursts and stop the second it looks smooth and frothy. If you pour it and it looks thin instead of pillowy, that's the tell you went too far.

Here's how this drink actually breaks down on the flavor scale.

Since this drink leans so sweet, here's what actually holds its own next to it.

What to put next to it

This drink is dessert, so treat it that way. I like it alongside something with a little crunch or salt to break up all that sweet, cream cheese pretzels, a handful of buttery shortbread, even just plain salted crackers work weirdly well. It's not really a breakfast drink, it's more of an afternoon treat or a light dessert after a simple dinner.

What to buy

Grab whole milk, not a lower-fat version, since the fat is doing real work here to make this taste rich instead of watery. For the strawberry puree, check the label for one that's mostly fruit rather than syrup and food coloring. Cinnamon dolce syrup is the one specialty item, look for it near the coffee syrups or online, and a small bottle lasts through a bunch of batches.

Short on time or just don't want to measure out puree twice? Skip lining the cup with extra strawberry and just pour the blended drink straight in. You lose a little of that pretty pink swirl effect but it tastes exactly the same. I do this most weeknights when I just want the drink, not the presentation.

Don't skip the xanthan gum even though it's a tiny amount. It's what keeps the frappuccino from separating into watery layers a few minutes after you pour it. Whisk it in with the liquid ingredients before you add the ice so it doesn't clump.

How I change it up

In winter I'll swap the cinnamon dolce for pumpkin spice syrup and call it a pumpkin shortcake situation, it works better than you'd expect. No toffee bits in the house? Crushed graham crackers on top get you that same shortcake crunch with a little less sugar. And if strawberries aren't looking great at the store, raspberry or blueberry puree slides right into this recipe without missing a beat.

Questions from the kitchen

Can I make this without xanthan gum?
You can skip it, but the drink will separate into watery layers within a few minutes of pouring. If you don't have any, drink it fast, or try a tiny bit of cornstarch mixed with the milk instead.
Is this drink actually keto or low sugar?
No, don't let the tags fool you, this is a full dessert with a lot of added sugar from the puree and syrup. Treat it as an occasional treat, not an everyday sipper.
Can I use frozen strawberries instead of puree?
Yes, blend frozen strawberries with a splash of the milk first until smooth, then use that in place of the puree. You may need a touch less ice since the frozen fruit adds its own chill.
Why did my frappuccino come out thin instead of thick?
You likely blended too long and melted the ice, or added the ice before the liquid. Blend in short bursts and stop as soon as it looks smooth and frothy on top.

That's really it, five minutes, one blender, and you've got something that tastes like a treat you'd normally pay six bucks and a wait in line for. Make it for yourself on a random weeknight, no occasion needed. Browse all recipes for more easy stuff like this.
