Can I make the kofta ahead of time?
Yes — and it actually helps. Shape the kofta onto skewers, cover them, and refrigerate for up to 4 hours before grilling. The cold rest firms up the fat and helps the skewers hold their shape when they hit the hot grates. The tzatziki can also be made a day ahead; the flavors deepen overnight.
What if I don't have a grill?
